Most of us use oil very frequently when we cook. There are so many kinds of oil to choose from though, that it can be overwhelming to some cooks. Many of you probably use extra virgin olive oil for most all your cooking needs, like I used to do. You might think that all oils have more or less the same effect on the health of your body—after all, oil is oil, right? The answer is NO. All oils are NOT created equal. The truth is that some types of oils are good for sautéing, some you should only use on salads, and others you should avoid altogether.
