Anglo-Indian cooking evolved from European women who were stationed in India and used local ingredients and recipes in conjunction with their own to produce a cuisine which was quite particular.Because India is such a vast country with such a divergence of recipes which vary from state to state depending upon the predominant religion – local produce and local preferences, there are many popular misconceptions about the cuisine.My generation were probably the last true Anglo-Indians and many of the dishes will disappear if they are not chronicled so I have attempted to put a small selection in this little collection.
